I hope you’ve enjoyed my past few weeks of Eggo recipes. We are halfway through the recipes already, which also means time is running out to submit your own Eggo recipe! This week- we’re talking breakfast for dinner. We love breakfast for dinner around here! The mornings are so crazy that most of the time I’m lucky to get my daughter to swallow a waffle on her way out the door. For cooking a great breakfast at home, sometimes the evenings are just better!
Waffles and Huevos is a grown-up breakfast for dinner dish. It’s a spicy take on breakfast for dinner that adults will love- I know my hubby did!
- 2 Eggo Waffles
- 2 Eggs
- 2/3 cup blue cheese dressing
- 1 can of adobe chiles in sauce
- 2 slices bacon
- 1 avocado
- Salt and pepper to taste
- Sides: Black beans, extra bacon
- Cook waffles as directed on box. Meanwhile, empty the can of adobe chiles and separate the chiles from the sauce.
- Stir the adobe sauce together with the blue cheese dressing. Set aside.
- Cook eggs as desired. If scrambling eggs, dice one of the adobe chiles and add to the scrambled egg mixture.
- Take waffles and spread the adobe/blue cheese dressing sauce on top of each Eggo waffle. Top each waffle with eggs.
- Cook bacon. Cut into small pieces.
- Cut avocado into small pieces.
- Top waffles with bacon pieces and avocado pieces.
- Sprinkle with salt and pepper to taste.
- Since this meal has a spicy kick, add sides to balance the taste. Black beans and extra bacon pieces are perfect!
