Confession: I have never made homemade ice cream. Until trying no-churn strawberry shortbread ice cream, that is. Here in our rural community, homemade ice cream is more like an event than a recipe. Relatives, always a generation or two older, pull our their tried and true ice cream makers from storage. These are the ones that require rock salt, pounds of ice, hand-cranking, and a little bit of reminiscing. Once the ice cream is complete, cousins and neighbors stop by for a good story and a bowl. I have several memories of mid-day Saturday phone calls during our first few years of marriage. “Auntie’s making ice cream. Ya’ll come down here in a few!” Of course, we always dropped what we were doing and went.
I’m not sure if it is the nostalgia or the hand-cranking, but I’ve always been intimidated by making homemade ice cream. I don’t have an ice cream maker and have no idea where to even start. Pretty sure I could never make it to live up to Auntie’s standards! I have a few friends who have newer ice cream makers, like this one, who swear by them. But do I need another small kitchen appliance? Even though the non-sensical answer is typically yes, I’m in a more minimalist season of life where I do not want to buy something I may not use a ton.
Luckily, the foodie bloggers have me covered. I stumbled across a few no-churn ice cream recipes, but none really caught my eye until this No-Churn Strawberry Shortbread Ice Cream recipe from Domestically Speaking. We still have a few strawberry farms around that have fresh strawberries available, and we are still diligently supporting their harvest at least a few times a week. I use fresh strawberries in one of these easy ways daily, but with our gallon of strawberries on the counter and this no-churn strawberry ice cream in my Instagram feed, I decided to forego intimidation and give this recipe a try!
