Tomato Vinaigrette Dressing

Parents of large families all have lots of things in common, but one of the biggies is this. The more kids that you have, the harder that it is to take them out to the store, on trips, etc. When the kids get older, the issue is more of cost (three boys can eat HOW MANY hamburgers??), but with younger kids, like mine, it’s more of logistics. Our triplet boys are now three, and I can count on one hand how many times that they’ve been in a typical grocery store. The one place that we have taken them lots of times is Sam’s Club. The boys can recognize that diamond logo from a mile away! Sam’s Club makes it easy for us to cart everyone inside. The aisles are wide and can accommodate our triplet wagon. The employees are nice and readily hand out samples to my crew. And Sam’s Club always has a great selection of fresh produce and vegetables.

It’s fun to pull the boys around in their wagon and point out various fruits and veggies to them. I’ve found that kids are more apt to try new foods if they are involved in the prep from start to finish. We always let the boys pick out a fruit of veggie that is “theirs.” They get to hold it while we shop and then give it to the cashier.

My kids have always been interested in tomatoes. I guess it’s because, to them, they look like an apple, but they are definitely not! On a recent trip to Sam’s Club, we picked up a few varieties of tomatoes so that I could make our family’s new favorite salad dressing: homemade Tomato Vinaigrette!

We bought canned and fresh tomatoes on this particular trip to Sam’s Club. We are using canned tomatoes for this recipe. These whole, peeled tomatoes make this recipe very easy!

Ingredients:

  • (1) 28 ounce can of whole, peeled tomatoes
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon garlic poweder
  • Himalayan sea salt, fine
  • Pepper to taste

 

Combine all the ingredients in a blender. Do not drain the tomatoes. Blend until the mixture is smooth.

If the above amounts are used, one batch of dressing will fit into a 32 ounce mason jar.

The balsamic vinegar and spices balance out the tomatoes in this dressing to make a delicious combination! I hope that you’ll give this recipe a try for your next salad.

    My little man also loves to shop at Sam’s Club and I think this would be a great way to get him to eat more tomatoes. He and I both would love this vinaigrette! [client]

    Melanie, I can’t believe that your boys are 3…where has the time gone? Your vinaigrette looks absolutely delicious…I have some canned tomatoes at home so I’ll have to whip up a batch! 🙂
