It seems like eons ago that I was in school, but I vividly remember my mother keeping a stack of Campbell’s Soup labels wrapped in a yellow rubber band on the kitchen counter. Her favorite soup was always the Campbell’s Tomato, and she would feed us kids the Campbell’s Chicken Noodle. She would collect the labels for what seemed to be months until one day when she would send them to school in my back pack. I recall receiving explicit instructions to turn the labels into my teacher. Though I didn’t know what the labels did back in elementary school, I knew that they must do something important for my school if my mom was taking such great care to collect them. I can’t count the number of times that I carried a big stack of red and white labels in to my teacher. The Campbell’s Labels for Education program has been around for 40 years, and it’s not just the classic red and white soup labels that give schools a hand anymore. I was surprised to realize that labels and caps from products I purchase every week (like Pace Picante Salsa and Pepperidge Farm Goldfish) actually help schools reach their goal, too. And with recipes like this yummy Taco Twist Soup and Salad, I guarantee that we’ll be going through a LOT of Pace Picante Salsa.
The genius behind this Taco Twist Soup and Salad is that I only have to cook one kind of meat one time. You could portion the meat out and have soup tonight followed by the salad tomorrow night. Or you could eat both dishes tonight. Or you could eat the salad and the hubby could eat the soup. Twist it up however you want.
Taco Twist Soup
recipe adapted from Campbell’s Kitchen
Ingredients:
- 1.5 pounds thin sliced chicken breast
- Olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 3/4 cups Swanson® Beef Broth
- 1 cup Pace® Picante Sauce
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup uncooked pasta
Combine chili powder, cumin, and garlic powder.
Heat a few teaspoons of olive oil in a large skillet. Add chicken. Sprinkle chicken with above spice mixture. Cook chicken until it is done and cooked through.
Remove the largest chicken breast. Set aside. This is what we will use for the salad later.
Slice remaining chicken until strips in skillet.
Add broth, Pace® Picante Sauce, and tomatoes. Bring to a boil, and then add pasta. Cook the pasta for the length of time indicated on box.
Serve!
Taco Twist Salad
recipe adapted from Campbell’s Kitchen
Ingredients
- Set Aside Chicken from the above Taco Twist Soup Recipe
- Fresh Greens, washed and chopped
- 1 cup Pace® Chunky Salsa
- 1/4 cup water
In a small saucepan, bring water and Pace® Chunky Salsa to a boil. Allow it to simmer for approximately five minutes, stirring occasionally. Remove from heat.
In a bowl, add fresh greens and top with chicken that has been cut into strips.
Top with salsa mixture.
Of course, feel free to add any other toppings- onion, pepper, etc. as desired to the salad. However, the great thing about the salsa mixture is that the Pace® Chunky Salsa has extra little things like that in it, so you could keep it simple and include nothing additional!
Serve!
I have to cook dinner anyway, so why not use products that are beneficial to my school? There are food varieties to accommodate anyone’s palate for low prices at Walmart, which is where I purchased the Pace Picante Products and Swanson broth.
