In spite of the sweltering heat, I look forward to summer just for the summer vegetables. There’s absolutely nothing like farm fresh veggies in a delicious recipe. If you don’t have the space to grow your own, the next best thing is buying fresh local produce from Harris Teeter. Harris Teeter has a wonderful produce department that houses a few of my summer favorites like squash, zucchini, and tomatoes. I’m using all three of these in this Summer Veggie Medley Sauté. This medley makes for a great side dish, or fix it in a larger quantity for a cookout or gathering.
Ingredients:
- Olive oil
- 4 zucchini
- 2 squash
- 2 medium tomatoes
- 1 garlic clove, minced
- 1 teaspoon oregano spice
Slice the zucchini and squash into strips. Cut the tomatoes into thin circles.
Heat a few tablespoons of olive oil in a large pan. Place all of the vegetables, garlic, and spice into the oil. Sauté the vegetables until the squash and zucchini are soft and the tomatoes have cooked. This process should take no more than a few minutes.
Place in a serving dish and pair with your favorite grilled meat for a fresh summer meal.

I LOVE fresh summer vegetables! None of the farms on that list are close to me but it makes me want to go to my local farmers market soon! Thanks for this great recipe. Once we get so many garden vegetables in August I usually run out of ideas on what to do with it all.
