I love using my slow cooker. In the summer, I prefer grilling or slow cooking over using the oven. Our schedules are more flexible during the summer, and utilizing my slow cooker allows us to have dinner when ever we choose. If we are outdoors playing ball or taking a walk around the neighborhood, we can come in to a house full of good smells and ready-to-eat food. This Slow Cooker Chicken is an easy recipe that the entire family enjoys. It pairs well with any side dish or a quick salad.

Ingredients:

- 1 cooked rotisserie chicken
- 1 small diced onion
- Olive oil
- (1) 26 ounce carton of chopped tomatoes
- (1) 6 ounce can tomato paste

- 1/2 teaspoon garlic powder
- (2) tablespoons honey
- (2) tablespoons paprika
- (2) teaspoons Pink Himalayan Sea Salt
Pull the meat off of the rotisserie chicken.
Place chicken on the bottom of the slow cooker. Top with the onion. Pour a bit of olive oil over the chicken and onion.
Place the remainder of the ingredients in a blender and puree until smooth. Pour the mixture into the slow cooker. Cook on low for 4 hours.
I’ve found that to clean my slow cooker, I shouldn’t wait too long to clean it after the food has finished cooking. I transfer the chicken to a serving dish, and as soon as the slow cooker is cool enough to touch, I transfer it to the sink to wash. I then use warm water, dish soap, and a Scotch-Brite® Scrubbing Dish Cloth to clean up food reside. Growing up, my mom always used dish cloths, and so they have always been my favorite dish cleaning tool. This slow cooker chicken pairs great with Roasted Potatoes. On cooler days when I decide to turn on the oven, these Roasted Potatoes are an easy side dish. Here’s the recipe for that, too!
Ingredients:
- Small potatoes, quartered
- Olive oil
- Sea Salt or Pink Himalayan Sea Salt
- Ground pepper
Preheat oven to 425 degrees.
In a large bowl, combine the small potatoes with enough olive oil to just cover the potatoes. Sprinkle with sea salt and ground pepper to taste. Combine thoroughly.
Place aluminum foil on a baking sheet. Spread potatoes on the sheet. Bake for 20 minutes or until potatoes are easily pierced with a fork.

I haven’t’ had a slow cooker in years but I keep seeing all these great recipes that I just have to try.
Especially now that summer is here I have no desire to heat up the house unnecessarily either.
I remember the one I had was a pain in the butt to clean but with those scrubbing cloths I am sure it’s a much easier task.
The slow cooker is my favorite way to prepare meals. Nothing is more convenient than throwing a bunch of ingredients into the slow cooker and coming home to a warm delicious meal. I love the wya you prepared this chicken dish. I cant’ wait to try this recipe!
I have to say that using a precooked chicken for this is brilliant! I do a similar recipe sometimes with raw chicken, and it typically gets tough from cooking so long. I’ll be trying this for sure!

I really should use my slow cooker more often. It really does make dinner a lot easier (and faster) to accomplish. I used to make chili often with it. This chicken dish looks like something that my Dad would really enjoy.
I love my slowcooker as well, but it does get very messy. It can also be harder to clean. Especially if you have a large one! This recipe looks delicious and I am going to have to try it.
I have been trying to serve chicken more often since it’s healthier than some other family favorites. The crockpot is my best friend, so I will be using this recipe. I just need to pick up some Pink Himalayan Sea Salt.
