Slow Cooker Chicken Taco Boats and Giveaway

It’s Game Day! Are you feverishly preparing for a crowd tonight? Anytime we have a gathering at home, my husband obsesses over whether we will have enough food. We’ve been to numerous parties where there wasn’t enough food for everyone, so he makes it his mission to have overabundance to eat. Even with preparation, he always spends half of the party day questioning if we have enough food. If that is you today, I have a super simple dish that can be cooked in the slow cooker. That way, if you need it, then it’s cooked, and if you don’t, then you have a dish for dinner tomorrow night. These Slow Cooker Chicken Taco Boats look cute on a Game Day party table!

If I could classify my cooking philosophy, it would center around cooking with what I have on hand. I always have these frozen chicken tenderloins on hand. They are a god size for kids, and I never have a problem with them cooking evenly. That’s why I’m using them today, but feel free to use whatever chicken that you may have on hand, frozen or not.

Ingredients:

  • Frozen Chicken Tenderloins, approximately 5 (however many will fit flat in the bottom of your slow cooker)
  • 1 packet of Old El Paso Mild Taco Seasoning
  • Olive oil
  • Half a can of chicken broth
  • Old El Paso Stand ‘n Stuff Taco Shells
  • Shredded Lettuce
  • Shredded Cheese
  • Diced Onion
  • Diced Tomato
  • 1 Avocado from Mexico, cut into pieces
  • Any taco sauce, as desired

Pour olive oil in the bottom of the slow cooker. How much you use is dependent on how large the slow cooker is. I have a 6 quart, and I used about 2 tablespoons of olive oil. Place the chicken tenderloins in the bottom.  Pour the chicken broth in. It should come up about halfway of the chicken. Tear open the Old El Paso Mild Taco Seasoning Mix Packet, and sprinkle liberally over the chicken. Cook on High for 3-4 hours. Mine were done in three.

Shred the chicken and place in a bowl. Spoon some of the liquid in the slow cooker over the chicken and stir.

While the chicken is cooking, cut up the fresh taco bar ingredients. Yum!
