I’m so blessed to be able to have dinner with my kiddos pretty much every night. The triplets are on a fairly set schedule, and when five o’clock rolls around, they are ready to eat. I am lucky that they are not picky eaters, and I enjoy introducing them to new flavors. My favorite tool to lay a hot meal on the table to maintain our daily tradition of dinner together is my slow cooker. I use my slow cooker 2-3 times a week. It’s wonderful for making dishes in large quantities (I definitely need this!) and for cooking tender meat. Last night, we had this delicious Slow Cooker Chicken Parmesan for dinner. The boys loved the Italian flavors combined with their favorite pasta!
Ingredients:
- 2 pounds chicken tenderloins (I use the tenderloins because they are perfect little portions for the triplets. Feel free to substitute chicken breasts, if desired.)
- 1 egg
- Olive oil
- 1/2 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon oregano
- Cooked thin spaghetti
- Ragu Traditional pasta sauce
Coat the bottom of the slow cooker with olive oil. Place the chicken tenderloins in the bottom of the slow cooker.
In a small bowl, use the fork to scramble the egg. Add the bread crumbs, Parmesan cheese, and oregano. The mixture will be thick.
Press the bread crumb mixture into the top of the chicken tenderloins that are in the slow cooker. Completely cover the chicken.
Pour the Ragu Traditional pasta sauce over the chicken. Cook on high for four hours in the slow cooker. Top the chicken over the cooked pasta. Add plenty of the saucy mixture to flavor the pasta. Yum!
