CB Disclosure White Background 600 px wideI cook with olive oil every day. I add it to almost all my recipes. The hubby has even commented on the lack of butter in our refrigerator. Hey- there are very few things that I can’t cook with olive oil. But for the past week I’ve been a tad on the sneaky side, and the hubby has no idea. I’ve been adding STAR Butter Flavored Olive Oil to my recipes. Olive oil, in a butter flavor? Yep, it’s my little cooking secret.

I’ve brought out my slow cooker quite a bit here lately, and one of our new family favorites is Chicken Alfredo Soup. I swapped my normal olive oil with STAR Butter Flavored Olive Oil (yes, you can even use olive oil in a slow cooker!). This soup is a great winter comfort food, and with the cold weather setting in, my slow cooker will be putting in some overtime with this easy recipe.

This Slow Cooker Chicken Alfredo Soup uses my cooking philosophy of utilizing a combination of pre-made ingredients and fresh ingredients to make a homecooked meal in a blink!

Slow Cooker Chicken Alfredo Soup Ingredients #STARoliveoil #cbias #shop

Slow Cooker Chicken Alfredo Soup
Serves: 4
Ingredients
  • Star Butter Flavored Olive Oil
  • 1/2 cup chicken broth
  • 1 small green pepper, diced
  • 1 small yellow pepper, diced
  • 1 can diced tomatoes, drained
  • 1 box or bag of frozen vegetables
  • 1 jar of alfredo sauce
  • 5 frozen chicken tender pieces (uncooked, unbreaded)
  • Dash of basil, optional
Instructions
  1. Sprinkle 1-2 tablespoons of the olive oil in the bottom of the slow cooker.
  2. Add all ingredients to the slow cooker EXCEPT for the chicken.
  3. Combine the ingredients in the slow cooker.
  4. Add frozen chicken and cover the tenders with the other slow cooker ingredients.
  5. Cook on high for 3-4 hours or on low for 5-6 hours.

There are lots of reasons why I use olive oil in cooking, but the main advantage for my family is that it is cholesterol and carbohydrate free.
