Raise your hand if you are ready for a fun summer party? My kids all have their hands raised right now. After the strict schedule of school days, I think we all need a celebration. From cookouts with family to summer parties with the children’s program at church, we are planning on plenty of opportunities to enjoy summer and the sweet treats that come along with it.
Ice cream parties are a cool way to ring in the summer months. These Rice Krispies Ice Cream Cups put a different spin on a traditional ice cream cone, and they come in a hand-held size that is perfect for ice cream and toppings.
Ingredients:
- (6 cups) Kellogg’s Original Rice Krispies Cereal
- (10 oz) Jet-Puffed Marshmallows
- 3 tablespoons unsalted butter
- Non-stick spray
Topping Ideas:
- Strawberries
- Keebler Fudge Stripes Original cookies
- Keebler Chips Deluxe Rainbow cookies
- Bananas
- Whipped cream
Melt the butter in a large pan over low heat.
Add the marshmallows, stirring frequently until they are all melted.
Remove the pan from the stovetop. Pour in the Rice Krispies cereal. Mix thoroughly.
Spray a twelve cup muffin tin with non-stick spray, completely coating each muffin tin.
Spray a bit of the non-stick spray on your hands. Press the Rice Krispies mixture into each muffin tin, covering the bottom and sides to create a cup.
Using a knife to loosen the sides of muffin tin and pull out each cup.
These cups will keep in an airtight container for three days or serve immediately.
Right before serving, scoop ice cream into the center of each cup.

Why have I NEVER thought to make cups out of these?! What a great way to serve ice cream without having to dirty up loads of dishes (I hate doing dishes!)

You’ve just changed my husband’s life. Seriously, rice krispy treats are his favorite thing, and these are going to bring homemade sundaes to a whole new level. I’m going to make them for our memorial day bbq this weekend and set out a little sundae bar for our guests!
oh i love rice krispies treats! my grandma used to make these out of giant rice treats and they were soo good. i like your cup version and will have to try!
oh we love rice Krispie treats and always make them at Easter for the kids filled with mini chocolate eggs. They are so easy to mould too for centrepiece, ie instead of gingerbread houses etc
