Quick and Easy Baked Chicken Nuggets

If there is such a thing as expert “homegaters”, we are your peeps. Since having the triplets, anything we watch or do revolves around what we can accomplish at home. Fortunately, my husband and I are pretty much home bodies, so that isn’t an issue for us. I still like cooking yummy game day food. Who doesn’t, right? Chicken nuggets are always a winner, especially when kids are part of the game day festivities. Homemade nuggets are ten times better than frozen nuggets, and they are surprisingly easy to make. I also had the chance to try out my new Wilton Armetale Grillware Football Griller (a special thanks to Wilton Armetale for sending it to me to try!). There’s nothing like new cookware to get me excited to be in the kitchen.

Ingredients:

  • 2 pounds boneless, skinless chicken tenders, cut into 1 inch pieces
  • 1 1/2 cups Italian bread crumbs
  • 1 cup grated Parmesan cheese
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1/8 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Olive oil

Okay, let’s talk chicken. In the past, I’ve had readers comment that chicken tenders were not within their budget because chicken breasts are cheaper. I use chicken tenders because they are thinner, cook quicker and (in my opinion) more evenly, and are the perfect cut for nuggets for the kids. Feel free to use chicken breasts if desired, but I’ve found that chicken tenders work better for me. So, with that being said, let’s get to cooking!

Preheat the oven to 450 degrees. Spray the pan with nonstick cooking spray.

Add all the dry ingredients to a large bowl. Mix them completely.

Add the chicken, a few pieces at a time, and roll them in the mix to cover them. Place them on the baking dish. Drizzle olive oil over the chicken pieces.

Bake for 15-20 minutes and serve with your favorite marinara sauce!

Now, let’s talk bakeware. I used the Wilton Armetale Grillware Football Griller to cook these nuggets. And, yes, as I disclosed above, Wilton Armetale is awesome and sent me the Griller to use for my homegating. But I’m going to be totally honest: I ADORE this Griller! It is now my go-to Griller for making homemade nuggets. The Wilton Armetale Grillware Football Griller can go from freezer to oven to tabletop to fridge. If you’re actually tailgating and not homegating, the Griller can be used on an actual grill, as well. Although it is not dishwasher safe, it cleans up in a snap. And it makes for a lovely serving platter, too!

    Would it sound greedy if I said I want it all???
    I love the chili pot (it would be great so I wouldn’t have to run inside to stir something on the stove) but I have to admit the piece I want the most is the Jalapeno Tray. I LOVE grilled stuffed jalapeno poppers!
