I’m not a Paula Deen or Rachel Ray by any means, but I can finally say that I’ve won a prize for something I baked! Through a Baking Contest at my full-time job (the proceeds of the goodie sales went to our outreach organization), I won a gift card to a local restaurant with these yummy Orange Creamsicle cupcakes!
The inspiration for these obviously-delicious creations came from two places: my own Kool-Aid Frosting post that landed me a spot on Tip Junkie’s Top Ten Crafts to Make This Week, and the Pink Lemonade Cupcakes from The Kurtz Corner.
Want to make some for your family- just in time for summer?? Here ya’ go:
Cupcakes:
-1 box of white cake mix, along with whatever ingredients are on the back of the cake mix box
-1 packet of orange Kool-Aid
Make the cake as directed on box, adding a packet of orange Kool-Aid Mix to the batter. Bake as directed.
Now pick ONE of the two icing options:
Option #1
I-want-to-be-a-professional-Icing:
2 sticks of unsalted butter
2 c. powdered sugar
1/4 tsp table salt
1/2 tblspoon vanilla extract
2 tblspoons milk
a dash of orange Kool-Aid to taste (or orange extract. But Kool-Aid’s cheaper. Just sayin’)
Mix softened butter and sugar together until blended, then add the salt, extract, and milk. Once this is well blended, add a dash of Kool-Aid mix and stir. Taste the icing and add more Kool-Aid mix, as desired. Be careful of adding too much Kool-Aid mix, or the icing will be tart. Apply icing to cupcakes.
Option #2
Who-Am-I-Kidding-I-Barely-Had-Time-To-Make-These-Icing
1 can of white icing
1/4 of a packet of orange Kool-Aid to taste
Empty the white icing into a bowl. Add Kool-Aid and stir thoroughly. Apply icing to cupcakes.
