Christmas is coming whether I am ready or not! We have a total of six parties to attend over the course of six days, and at least three of them are potlucks. I’m always looking for a way to put a twist on a classic, so this year I’ll be taking Peppermint Rice Pudding to a few of our gatherings. This dessert is always a huge hit for those with a sweet tooth! A big thank you to Minute® Rice for sponsoring today’s recipe.
Ingredients:

- (2) 3.4 oz. boxes of vanilla pudding, prepared as directed on package
- 1 tub of whipped topping
- 1.5 cups cooked Minute® Rice White rice, cooled
- 2 tsp. peppermint extract
- (1) 10 oz. bag of pepperming baking chips
This recipe is adapted from the Classic Rice Pudding recipe on the Minute® Rice website.
In a large bowl, stir the rice and peppermint extract in the pudding until thoroughly combined. Gently fold, not stir, in the whipped topping until combined. Add all but 1/4 cup of the peppermint baking chips and mix well.
Refrigerate for a minimum of four hours. Sprinkle the remaining peppermint chips on the top of the pudding mixture and serve.
This recipe is quick and easy to whip up for a holiday potluck! Other than the refrigeration time and Minute® Rice cooking time, this dish took about 15 minutes to complete. If you’re a long time user of Minute® Rice like I am, then you know that it is THE rice to use when you need a five minute dish. Outside of desserts, Minute® Rice is great to pair with leftover turkey or ham, and it makes an excellent stir-in for vegetables.
