One Pot Chicken Salsa

The holidays get a little crazy around here. We run from here and there, around the square, and to grandmother’s house we go. You get the idea. Sometimes, I forget that I’m supposed to make dinner until the last minute when the kids remind me that they’re hungry. Other than slow cooker meals, my favorite kind of recipes are one pot meals. With minimal prep and few dishes to wash, one pot meals are awesome to maximize time and resources during the busy holiday season. Today I’m combining spice, flavor, and protein in a delicious One Pot Chicken Salsa dish made with My Brother’s Salsa.

The secret ingredient in this dish is the My Brother’s Salsa in Black Bean and Corn Mild. I picked up this pre-wrapped holiday four pack from my local Sam’s Club. If you can keep from breaking the box open and trying all the flavors, this salsa collection would make an excellent holiday gift. I couldn’t resist, though. I had to use the salsas in this one pot dish!

Each jar of salsa, as well as the website, has more yummy recipes. I found the flavors of diced tomatoes, black beans, and sweet corn in the Black Bean and Corn salsa the perfect way to mildly spice a quick dinner.

Ingredients:

  • 1 pound chicken tenderloins or chicken breast
  • Half a jar of My Brother’s Salsa Black Bean and Corn variety
  • Half a jar of My Brother’s Salsa House variety
  • 1 can black beans, drained
  • 1 can sweet corn, drained
  • 1/2 cup cilantro leaves
  • 2 tsp. cumin
  • 2 tsp. chili powder
  • Olive oil

Spread about one tablespoon of olive oil in the bottom of a large pot/pan. Cook chicken until it is cooked through.

Add the remainder of the ingredients. Simmer on medium for approximately 20 minutes.

This recipe is great for families whose members have differing tastes. One person may like the Salsa Chicken exactly as it is. Another may want to enjoy it over a bed of rice. Add a tortilla, and you have a whole other way of serving the dish! This One Pot Chicken Salsa is definitely versatile.

I’ve never used a salsa like the My Brother’s Salsa Black Bean and Corn variety. While the product is sold in other stores, the four pack from this women-owned company is only available for a limited time at Sam’s Club.

    That looks really delicious! I love anything Mexican and this is great as a meal in itself, but we could definitely use it as a base for other Mexican dishes (burritos, enchiladas, etc)!
