One Dish Dinner Bake

I cook a minimum of twice a day. My goal is to make a dinner that allows for enough leftovers that can suffice for lunch the next day, but that doesn’t always happen. With cooking comes dishes. A lot of dishes. While I don’t mind cooking, I do dislike doing dishes. We have a dishwasher, but often I have several pieces that can’t go into the dishwasher, and so I wind up washing them all by hand. Anytime that I can combine ingredients into a one pot or one dish wonder, I’m excited. That’s exactly what I’ve done with this recipe today- it’s a super simple One Dish Dinner Bake that provides a hot meal that can actually be customized to each family member’s preference!

Ingredients:

  • Farm Rich® Smokehouse Dry Rub Smoked Chicken, thawed in the refrigerator overnight. Farm Rich® Smokehouse Dry Rub Smoked Chicken is located in the freezer aisle and is high in protein.
  • Birds Eye Steamfresh® Flavor Full – Sour Cream and Onion Potatoes
  • 1 green pepper, cut into small pieces
  • 1/2 of a large onion, diced
  • Shredded cheddar cheese
  • Bacon bits

Note: You’re going to notice a few things about this recipe. First, you  may notice that I make it in layers rather than mixing the ingredients all together. Secondly, you may notice that I do not add any kind of sauce or spices. I did both of these things intentionally. By making the dish in layers, the chicken can be scooped out from the bottom of the dish and served individually. I have two kiddos who do not like any type of vegetables. However, by placing the chicken in the bottom, it can be separated and served to my picky eaters without having to be cooked in a different dish. I did not use any kind of sauce for the same reason. One kid likes ketchup only, one likes BBQ sauce, and the hubby likes honey mustard. By cooking the dish “dry”, it allows it to be adjusted to each family member’s preference after serving. Awesome, right! However, if you have a family that all has the same tastes, feel free to add a sauce or mix everything all together. 

 

Preheat the oven to 350. In a glass dish, spread the Farm Rich® Smokehouse Dry Rub Smoked Chicken.

Top with the peppers and onions.

 

Pour the Birds Eye Steamfresh® Flavor Full Sour Cream and Onion Potatoes on top of the vegetables.

Sprinkle shredded cheddar cheese over the potatoes, using as much or as little as you like. Add bacon bits to taste.

 

Bake for 20-25 minutes, or until the cheese is melted and bubbly.

    I love how quickly this comes together. I work several part time jobs and have a toddler running around my house. I’m always needing quick meals. I also like how you make it to suite your family with each of their tastes.
