No Bake Raspberry Lemon Bites

Are you headed to a picnic this summer? These No Bake Raspberry Lemon Bites are quick, tasty, and a great taste of summer!

Do you have a favorite potluck dessert?

In a family of six, no one can quite agree on a favorite dessert. Some say Chocolate Eclair Pudding. Others like the taste of these No Bake Banana Pudding Bites. And, of course, fruit drizzled in honey is always a hit! I wanted to place a twist on this popular dessert to incorporate summer fruit with a pudding based dessert. Raspberry is often too tart on its own, but the addition of lemon is the perfect combination. These No Bake Raspberry Lemon Bites are quick and easy to make.

Raspberry Lemon Bites recipe for a quick summer dessert

Ingredients:

  • Vanilla Wafers
  • (8 ounce) tub of whipped topping
  • (1) 3.4 ounce box of lemon instant pudding bowl
  • Raspberries, washed and dry
  • (2) cups of milk

Pour the lemon pudding mix into a bowl. Add the two cups of milk. Use a whisk to combine the ingredients for 4 to 5 minutes. The mixture will thicken.

Add 1/4 cup of whipped topping to the pudding mixture. Fold.

The mixture will turn a bit lighter in color and be fluffier in texture.

Place the vanilla wafers onto a serving platter.

Place pudding mixture into a zip top bag. Cut a small piece from one of the corners. Use the bag to “pipe” the pudding mixture onto each vanilla wafer.

Add a raspberry to the top of the lemon pudding mixture.

My husband actually thought that these were better after being in the refrigerator for a few hours. The flavor from the raspberry sort of meshed in with the lemon to better combine the flavors. These No Bake Raspberry Lemon bites are a bit more picnic-friendly than the Banana Pudding Bites due to not having banana to brown.

These fit nicely in a large Pyrex dish and transport easily, as well.
