Meatless Sweet and Sour Hawaiian Lettuce Wrap

At my husband’s last yearly physical, his physician recommended that he begin Meatless Mondays. For those not familiar with the trend known as Meatless Monday, it is a set day of the week where someone deliberately chooses to not consume any meat. The purpose is to reduce the amount of meat in one’s diet by abstaining from meat for a day. For a meat lover like my husband, he initially thought of Meatless Monday as a bit drab. It took a few weeks, but we worked together to create meatless, tasty recipes that he now actually enjoys rather than dreads. This Meatless Sweet and Sour Hawaiian Lettuce Wrap is one that we have on our menu rotation.

Our meal times are busy, especially during the school year. As in the tradition of many recipes on this site, I try to make them busy-family friendly to save time during those hectic nights where a family dinner is a priority, even when the minutes are limited. This recipe features two time-saving hacks.

#1 All the items are cooked on the grill. Don’t worry about running back and forth from the grill to the stove top or oven. If you have a large enough of a grill surface, all the items can be cooked simultaneously.

#2 Purchase pre-made sauce. I enjoy (and usually prefer) homemade sauce, but when ingredients run low or time is strapped, a preservative-free pre-made sauce can be a lifesaver to have one hand. If you have a homemade sweet and sour sauce recipe that your family enjoys, feel free to substitute that for this recipe. Otherwise, a bottle of sauce from the store will work great.

Ingredients:

  • MorningStar® Farms Veggie Lovers Burger, 4ct Value Pack
  • Preservative-free sweet and sour sauce
  • (1) Small onion
  • (1) Red bell pepper
  • (1) Pineapple – Not sure how to choose a fresh pineapple that is actually ripe? Check out this post on How to Choose a Pineapple.
  • Large lettuce leaves – Iceberg lettuce or bibb lettuce work well for these wraps.

Wash the red bell pepper. Cut the top off and remove the seeds. Slice the pepper into rings.

Wash and peel the small onion. Cut the top from the onion. Slice the onion into rings, trying to keep the slices about 1/4 inch in size.

Wash the pineapple. Cut it into slices for grilling. If you are unsure how to do this, see how to cut a pineapple for grilling.

 

How to Cut a Pineapple for Grilling

Pre-heat your grill normally.

Place the onion slices, red bell pepper slices, pineapple slices, and MorningStar® Farms Veggie Lovers Burgers on the grill.

Cook the veggies and pineapple until soft. Cook the MorningStar® Farms Veggie Lovers Burgers as directed on the package. Baste the pineapple and MorningStar® Farms Veggie Lovers Burgers with sweet and sour sauce during the grilling process.

Remove the cooked veggies, pineapple, and MorningStar® Farms Veggie Lovers Burgers from the grill.

Rinse and pat dry the lettuce leaves.

Open one lettuce leaf. Roughly chop a MorningStar® Farms Veggie Lovers Burger and place in the lettuce leaf.

Roughly chop the pineapple, adding it on top of the MorningStar® Farms Veggie Lovers Burger.

Slice the pepper rings into 1″ strips and separate the onion slices. Place them on top of the pineapple.
