This recipe is one of the first dishes that I made when the hubby and I were first married. He loved it so much that he simply calls it “The Meal”. If I remember correctly, I originally found it in the Kraft Foods recipe magazines that they used to mail. I tried to find the recipe to link to it on their website, but couldn’t find it. I’ve made the thing so much that I have it memorized! It’s a family favorite, and I wanted to share it today!
Ingredients:
- 1 box of whole wheat penne pasta
- Italian dressing
- 1 medium onion
- 1 medium green bell pepper
- 1 tablespoon parsley (fresh or dried)
- parmesan cheese
- 5 medium sized chicken tenderloins
Begin by boiling the water and cooking the box of pasta as directed on the box. Meanwhile, heat 2 tablespoons of Italian dressing in a large skillet and cook chicken tenderloins until no longer pink. I use the frozen Tyson chicken tenderloins from Sam’s Club.
Cut the bell pepper and the onion into thin strips.
Slice the chicken tenderloins into small strips of chicken. Add the pepper and onion strips to the skillet. Combine chicken, pepper, and onion. Add parsley to the skillet. Stir until covered. Cook chicken and vegetable mixture until vegetables are tender.
At this point the pasta and the chicken skillet should be finished.
Spoon out the desired amount of pasta onto plate. Cover with Italian dressing, and stir to coat pasta. Spoon chicken and vegetable mixture out over the pasta. Sprinkle Parmesan cheese to taste on top of chicken/vegetables.
This meal is also great reheated the next day for lunch!
