After a few weeks of creative after school snacks, my arsenal of great snack ideas (and my motivation) decreases. I like to have a few unique recipes up my sleeve that I can pull out last minute when I’m feeling less than inspired. These Loaded Potato Crackers are a mixture of everything that you’d find on a loaded baked potato, but on a cracker for a quick and easy bite-sized recipe.
Ingredients:
- (2) russet potatoes
- (2) pieces of bacon, cooked
- Dried chives
- Cheese Spread
- Your (or your kiddo’s) favorite choice of cracker. I’m using a sweet potato blend cracker for this recipe.
To make this recipe quick for after school, microwave the russet potatoes. Use your favorite method for microwaving them until they are soft and ready.
Scoop out the insides of the potatoes and place them in a small bowl.
Stir in 1/2 cup of the cheese spread. Mix thoroughly with the potatoes.
Spoon a tablespoon of the mixture on top of a cracker. Sprinkle crumbled bacon and dried chives over the cracker and cheese spread mixture.
My kids like these served while the potatoes are still warm. The potatoes mixed with the cheese spread provides a hearty flavor with the authentic taste of Pimento cheese.
