Loaded Mac Cups

Ever since giving birth to the triplets, I find myself eating in spurts that correlate with their eating and nap times. I know that there are actually some days where I probably wouldn’t get to eat at all if I didn’t have a “get it while I can” attitude. For those of you who have followed by story, then you may remember that there was a time last year where I struggled with eating properly, simply because I was so time strapped. Since then, I’ve rebounded and lost the majority of my baby weight. I have people ask me how I did it, and it’s actually not because I’m preparing fresh, paleo meals every day. It has more to do with proportion and finding ways to add vegetables and protein into already prepared dishes. That’s exactly what I did with today’s recipe. I’m using Stouffer’s White Cheddar and Bacon Mac Cups to make these Loaded Mac Cups in only five minutes. With just a few add-ins, I can make this dish and eat while taking care of the kids on-the-go.

Begin with Stouffer’s White Cheddar and Bacon Mac Cups. There are also other varieties, but white mac is my absolute favorite! Walmart has several different kinds from which to chose. Contrary to the other mac cups that you may have been, these are located in the frozen foods section.

Since the Mac Cups already contain bacon, I decided to grab a vegetable and a protein to add: steamed broccoli and a few slices of thin deli turkey.

Cook the Stouffer’s Mac Cup according to the package instructions. Empty the Mac Cup contents into a slightly larger bowl. Chop up the broccoli and the meat a bit. Add it to the Mac Cup.

ย I always add more veggies than macaroni to make sure that there are plenty of greens. Having Stouffer’s Mac Cups and Nestle Pure Life Purified Water on hand keeps me with quick and easy choices, as well as hydrated!

The Nestle Pure Life Purified Water in the 8 ounce sizes are a good size for the refrigerator or the pocketbook. They must be popular- I snagged the last one on the shelf at my local Walmart.

    Stouffers really knows their stuff ๐Ÿ™‚ I love their lasagna, but haven’t tried their Mac & Cheese. I love putting broccoli in… Maybe I could convince my son to eat a vegetable. I bet spinach is good, too!

    Those look good!! I’m the same way, with twins and their older sibling, sometimes you just have to eat something quick around their schedules. I like this because it would be a good to-go meal as well.
