Heading to a few cookouts this summer? We’ll probably attend a few. We’ll go to those who decide they can handle our wild trio. Trust me- our kiddos + a cookout = not for the faint of heart. Most of the cookouts that we are invited to are potlucks. Potlucks are always fun, and it gives me a chance to share some of our family’s favorite recipes. But, sometimes, I forget to plan ahead of time no matter how hard I try. Sometimes, I just plain need a last minute recipe. This Last Minute Meatlover’s Pasta Salad is the perfect dish to feed a crowd. It also makes a great side dish to go along with whatever may be on the grill.
The key to this last minute pasta salad recipe is to keep a few boxes of Suddenly Salad in the pantry. There are lots of varieties from which to choose, and everything you need to create a basic pasta salad recipe is included. Add these other ingredients, and it becomes a pasta salad that meatlover’s will like.
Ingredients:
- Betty Crocker Suddenly Salad Classic – For a small group, you’ll need two boxes. For a larger group, use four boxes.
- Other ingredients included on the Suddenly Salad box
- 8-10 pieces of cooked bacon
- 1 bag of diced ham
- 1 bag of mini pepperonis
Prepare the Suddenly Salad as directed on the box. Once the pasta salad has been prepared, stir in the meat.
Crumble the bacon strips up before adding. If preparing two boxes of Suddenly Salad, add half the bags of diced ham and mini pepperonis. If preparing four boxes, add the entire bag of each. Stir thoroughly to completely mix in. Serve immediately or refrigerate until time to serve.

Actually Suddenly Salad Italian, but I also add a can of stew tomatoes to it and sprinkle parmesan cheese on top. mmmm
I have a special cookout dish. Ever since I was small, my gran has made something called “cabbage noodles”. Very simple. Egg noodles (cooked al dente’), sauteed onion, fresh cabbage, and butter. Fix cabbage how you like best (we cook with water until tender, then give a little fry in butter at the end), saute onions, put with cooked noodles, add butter. They are good hot or cold. Maybe not regular BBQ food but a family tradition ๐
