Kid-Friendly Mediterranean Style Chicken and Pasta

Last year, my husband and I participated in a popular food health plan. It only lasted 30 days, but it left us with some concrete ideas on how we wanted to change our food habits. Out of many new food choices, we decided to start using gluten free pasta, even for the kids. Pasta is a popular family meal, especially on busy weeknights. However, it’s easy to get tired of the same pasta dish time after time. I have always liked dishes with a Mediterranean spin, but my kids are not enthused about some of the common additions in Mediterranean style foods, such as olives. By taking out a few of the things that they do not prefer and adding in common pasta flavors, I’ve made this tasty dish kid-friendly.

Kid-Friendly Mediterranean Style Chicken and Pasta AD

 

Ingredients:

  • 1.25 pounds of chicken tenderloins
  • Olive oil
  • (1) small red onion
  • (1) small zucchini
  • 4 ounces of cherry tomatoes
  • (1) can of tomato sauce
  • 1/4 tsp. garlic powder
  • 1/2 tsp. oregano
  • 1 tsp. basil
  • Pink Himalayan sea salt
  • (1) box of Barilla Gluten Free penne pasta

Kid-Friendly Mediterranean Style Chicken and Pasta AD

Cook the Barilla Gluten Free penne pasta according to the directions on the box, using the Pink Himalayan sea salt.

While the pasta is cooking, prepare the chicken and vegetables.

Dice the onion. Cut the zucchini and cherry tomatoes.

Heat olive oil in a large skillet on medium heat. Add the chicken. Cook completely.

Add the onion and garlic powder. Cook for 3 minutes.

Add the zucchini, cherry tomatoes, oregano, and basil. Add Pink Himalayan sea salt, if desired. Cook for 5 minutes.

Add the can of tomato sauce. Simmer for approximately 10 minutes.

To serve, place the pasta in a large dish and add the chicken mixture on top.

If your kids have more adventurous taste buds than mine, feel free to add olives or more veggies. Dishes such as these are a great way to sneak in those veggies.

Find Barilla Gluten Free Spaghetti and Barilla Gluten Free Penne at a retailer near you. It has a taste similar to “regular” pasta. I grabbed mine during a Publix run. Save with this digital coupon, and get more recipe ideas at Barilla.

    My family does not need to eat gluten free but we have a lot of friends that do. So having a recipe on hand that looks amazing, easy and family friendly is perfect for me. I would love to invite those friends over for a nice fall meal. This chicken and pasta recipe would be great with other pasta as well. YUM!

    Oh wow the pretty colors of the food in this post! You just know the food is fresh! The recipe itself looks super easy I’m sure the adults loved it too 😉 Gotta try that pasta out!

    This pasta looks like one that would be enjoyed over and over again. Finding meals that kiddos and adults love can definitely be a challenge so this looks like a winner! Pasta is always a win!

    Love that this is a gluten-free dish. My family is slowing moving to a gluten-free lifestyle, so this would be perfect. It looks delicious, too. My kiddo would probably devour this. 🙂

    Oh my this looks so good and sounds so good! I need to try this one out to switch things up a bit, I really have been making the same thing over and over again. I love being able to throw in something new and exciting like this mid week and I think I will try that!

    My best friend is gluten free and so when I’m with her, we always have to try to figure out gluten free meals. So this is great because pasta is one thing she and her daughter usually can’t have. glad to know about this and it looks delicious!

    My kids can be so picky, but pasta is definitely on the approved list of foods. With the veggies mixed in, they’ll be happier to gobble them up. Can’t wait to try this recipe!
