Doesn’t that title just sound yummy and super southern? I originally found this recipe over at MidState Mills. I modified it a bit (theirs uses pulled pork), but it turned out the same delicious way! We are always invited to several potluck-style gatherings over the holidays, and I think this is a perfect dish to take along!
Ingredients:
- Two 16-18 ounce tubs of pre-cooked pulled chicken barbeque. I purchased the Lloyds brand.
- 1 cup Self-rising corn meal mix
- 1/2 cup milk
- 1 large egg, lightly beaten
- 2 tablespoons canola oil
- 1/2 cup finely chopped onion
- 1 cup shredded cheddar chees
Pre-heat the oven to 400 degrees. Coat the bottom of a 13×9 inch dish with nonstick cooking spray. Pour the two tubs of BBQ chicken in the bottom of the dish.
Combine the remaining ingredients until well mixed. Spread over the BBQ.
Mmm this does look good! Always in the mood for a good Southern meal!
