Ham and Cheese Egg Muffins

I was just speaking to another mom this weekend about how quickly the school year is approaching. It’s coming, ready or not. I’ve been working on getting organized.

School supplies — CHECK!

Backpack — CHECK!

School clothes — CHECK!

Meal plan — Umm…I’m working on it.

I have a few main recipes on the list, but I am always trying to swap out ingredients in traditional recipes and replace them with ingredients that moms can feel good about. These Ham and Cheese Egg Muffins are great for breakfast or for lunch, and they are egg-based instead of flour based. Containing no sugar, they have enough protein to jump start my family’s day.

Ham and Cheese Egg Muffins AD

Ingredients:

  • 2 tablespoons Horizon® organic unsalted butter
  • 1/2 cup Horizon® organic milk
  • 3/4 cup Horizon® Organic Shredded Cheese
  • 3/4 cup diced organic ham
  • 1 dozen eggs
  • Pepper
  • Pink Himalayan sea salt

Preheat oven to 350 degrees.

Melt the butter.

Crack the eggs and whisk. Pour in the melted butter and milk. Add salt and pepper, as desired.

Stir in the cheese and ham.

Grease a 12 cup muffin pan. Pour in the mixture evenly into each cup.

Bake for 20 minutes. Pull them out of the oven and check. Place them back into the oven at 5 minute intervals until they are done. Do not over bake.

    OMG these go right to the top of my list of must have ingredients for quick back to school meals ideas. LOVE all the ingredients. I have seen this brand many places but have yet to use it or buy it. I will remember the brand for sure. Thanks.

    We love Horizon products, and always purchase them. My daughter has food allergies, and when she was diagnosed we went organic. They were the first milk, cheese, and butter we bought. This recipe sounds like a perfect weekday breakfast! This is loaded with everything my daughter would love, and I’m definitely gonna make it!

    OK these look delicious. I don’t want to think about meal planning with school back in session, but I guess I must. I love Horizon Organic Milk and think these breakfast muffins sound delish. I’m thinking first day of school breakfast!

    I pinned these earlier today and thought they were the cutest, little breakfast muffins. They are the perfect combo of ham, egg, and cheese. Best of all, they are handheld, so perfect for the kiddos to eat on the way to school.

    Ummmm. These look really delish! I love all the ingredients and have made cheese muffins before. But I’ve never thought to combine them with ham or even sausage. I’m going on a road trip this month. And I think I may have to make these and keep them in the cooler for breakfast and even snacks. (13 hour drive). Thanks for sharing!

      I kept these for about 3 days in the refrigerator and they were still good.

    What a fun idea! I’ve been looking for some quick and healthy breakfast ideas, especially for my husband. If there’s something in the fridge that’s easy, it will save him from a donut at the coffee shop. The ingredients are something I always have on hand. Going to give them a try tomorrow morning.     These would be perfect to make ahead of time for back to school breakfasts. We hardly have anytime in the mornings so this would be a great option paired with some fruit. Pinning this recipe now.
