I began this school year in August with a new list of creative snack ideas. It’s now November, and those ideas as now old news. The kids are just as tired of eating them as I am of making them, I think. I’ve discovered over the years that sometimes kids just need a fun name or theme to make something new again. For these Galactic Fruit and Pancake Sandwiches with a Green Galaxy Smoothie, we are embracing two of my kids’ favorite things: space and the color green!
My kids have no trouble eating yogurt and fruit, and this is a tasty way to combine the two. I’m also sharing my kids’ favorite smoothie recipe. It’s also my favorite smoothie to give to them because it sneaks in something that I can’t get them to eat on its own: spinach!
Let’s start with the sandwiches first!
Ingredients:
- (2) Kellogg’s® Eggo® Star Wars Galaxy Adventure™ Buttermilk Pancakes
- (2) Kiwi
- (1) cup organic yogurt
- Sliced strawberries
- Optional: honey
Peel the skin from both of the kiwi. Place the kiwi, 1/2 cup of the yogurt, and optional dash of honey in the blender. Blend until smooth.
Remove from the blender and pour into a mixing bowl. Add the other 1/2 cup of yogurt. Mix carefully.
Splitting the yogurt in this way keeps it from becoming too thin in the blender.
Prepare the two Kellogg’s® Eggo® Star Wars Galaxy Adventure™ Buttermilk Pancakes according to the package directions.
Turn one so that the design is on the bottom. Spread the kiwi yogurt mixture on the Kellogg’s® Eggo® Star Wars Galaxy Adventure™ Buttermilk Pancake.
Add the sliced strawberries.
Place the remaining Kellogg’s® Eggo® Star Wars Galaxy Adventure™ Buttermilk Pancake on top. Leave whole or cut into slices for serving.
Green Galaxy Smoothie
I make this one in large batches because this smoothie is a great mid-day recharge for me, too!
Ingredients:
- (1) frozen banana
- (1.5) cups fresh pineapple
- (1) cup orange juice
- (1) cup spinach
Place all ingredients in a blender and combine until smooth. Blend until the spinach pieces are completely incorporated.
That pancake is amazing!! My girls would flip over them (no pun intended- haha). We are huge Star Wars fans in this house. Can’t wait for The Last Jedi!
Oh my goodness, these look so perfect! I am going to have to pick some of these up for my son and surprise him. It’s great for those like me who aren’t so fancy with shapes to have them already done!
So much goodness on this post! I just picked up these pancakes this week when I went grocery shopping. My kids loved them when I made them yesterday! That smoothie looks really great. What a fun breakfast idea for kids.

For the longest time I have been searching for a smoothie recipe to incorporate spinach but not have a overpowering taste to it. I am quite excited to try this out because I already have all these ingredients in my fridge. As for the breakfast sandwich, this past Saturday I have something very similar to this except in a crepe and it is now my all time favorite.
I love the shapes of these products. Being able to make a quick breakfast is important in my home and when it tastes good as well as looks awesome I feel like I get to keep my supermom status for just one more day. I also love that smoothie as well, I need to drink more of those and get my veggies in!
We drink a smoothie much like this one and it is amazing. My boys would love the pancake sandwich. My boys are huge bluberry fans so i may add that too. Looks absolutly delicious.
My little guy would enjoy the galactic pancakes. He’d eat it either way … as the fruit sandwich or just alone in his hand as finger food. I will be the one drinking the smoothie.
Yum. This looks and sounds great. Green smoothies usually freak me out, but this one looks and sounds good enough for even my pregnant belly to handle! My kids love pancakes and smoothies, we do them every weekend so this is something we need to try!
How cute are these pancakes? I kind with they were some kind of vegetable so my kids would eat them! lol! Having said that, they get all those healthy ingredients in the smoothie..mine actually love green smoothies!
