We have an awesome blueberry bush in our yard. It was there when we bought the house, and every year it gives us an abundance of berries. I had no idea what to do with that many berries at first. We froze some and ate a ton, but then I stumbled across this pie recipe on AllRecipes one day. It uses all fresh blueberries and is simple to make. This pie has quickly became a Fourth of July tradition at our house.
Ingredients:
4 cups (2 pints) fresh blueberries, divided into 2 cups and 2 cups (frozen will not work well with this recipe)
1 regular 9 inch pie shell
1 tablespoon flour
1 tablespoon lemon juice
1 tablespoon butter or margarine
1/2 cup sugar
Wash all blueberries and let dry. Bake the pie shell according to directions on package and let cool thoroughly.
In a medium size pot, mix the flour, lemon juice, butter, and sugar. Add 2 cups of blueberries. Mix completely. The mixture will create a nice coating over the berries. Heat over medium heat until the berries begin to pop. Remove from heat.
Take cooled pie shell and add 2 cups of uncooked berries. Add the 2 cups of cooked berry mixture to the top of the uncooked berries. Let cool in refrigerator for 6 hours.
Serve will whipped cream. Pie will last about 2-3 days in refrigerator.
