Five Minute Pico de Gallo

I have discovered since my kids are at school that, when left alone for lunch during the day, I have a terrible tendency– I eat like a teenager ravaging through the pantry with no cooking skills. Sigh. A few more weeks of this will not be kind to my waistline. I decided last week that I need to start making better lunch meal choices, even if there is no one here to see! With a few Frontera® taco bowls in the freezer and this five minute pico de gallo on my side, I’m reforming my lunch.

In just a few minutes, anyone (even those with minimal cooking skills) can make this Pico de Gallo recipe to pair with a taco bowl or fajita bowl.

Ingredients:

  • (2) large tomatoes
  • (1) small onion
  • (1) lemon
  • Pink Himalayan sea salt
  • Fresh cilantro

Rinse the onion, tomatoes, cilantro, and lime.

Dice the onion. Place in a large bowl.

Slice the tomatoes. Cut out the seeds out from inside. Sometimes, I find it more time-savings to “punch” the seeds out into a plastic bag. Dice the tomatoes. Place them in the bowl with the onion.

Using herb shears, cut the cilantro. I’m using approximately 1/4 cup of fresh cilantro, but the great thing about this recipe is that you may use as much (or as little) as desired, according to your taste for cilantro. Place the cilantro in the bowl.

Cut the lime in half. Squeeze the juice from both lime halves into the bowl. Place approximately 1/8 tsp. pink Himalayan sea salt into the bowl. Stir all the ingredients together thoroughly.

I store my pico do gallo in a large mason jar. Refrigerate the pico de gallo for at least 3 hours for all the flavors to combine, but you can also eat it straight away. I typically do! 🙂

    Mmmm…pico de gallo. I can eat it straight from the bowl with a spoon. If I am forced to share it works well with recipes. I like how easy this is and the colors are gorgeous. I imagine it adds some magic to the already delicious Frontera meal!

    We just love Mexican food and your pico de gallo looks tasty and easy to make. We’ll be trying it on our next taco night. Those Frontera bowls look quite good too – didn’t know they made those.

    My husband would love this! It’s a great tasty snack to make at home. For vegetarians, we can just replace the chicken with fake meat and enjoy the vegetables in the bowl.

    What a great recipe! I love that it only takes 5 minutes to make. Great recipe to use some of our garden harvest for. YUMMY! I have been wanting to try these meals too. They look really great.

    Pico de gallo is by FAR one of my favorite things ever! I love it and all of the varieties of it. Definitely need to try your recipe – we’re having some friends over for a few games this weekend so maybe I’ll try it then! Yum!

    Pico de gallo is one of those fresh ingredients that just makes food taste better. Your recipe sounds absolutely delicious. I’ve never tried Frontera products but have seen them in stores. Will have to grab some and give this a try.

    Oh thanks for this! I know you can’t really mess up salsa too bad but I usually do. I love pico de gallo but I never make it myself. So I’m glad to know that it’s actually a lot easier than I thought!

    I just picked up the braised beef bowl today while I was shopping! It looks so good – I haven’t tried it yet, but I think that will be lunch tomorrow along with your pico de gallo. I am so guilty of not having time to prep a proper lunch for myself and I’m really excited to find something that looks so tasty and easy to make!!
