I am so excited to be representing my county in the Go Red for Women American Heart Association campaign this year! On February 7, I had the opportunity to attend a fun Go Red breakfast and meet so many inspiring women. February is a big deal for the American Heart Association because it is American Heart Month. It’s a great time to refocus on healthy eating and exercise for heart health. When I attended the breakfast earlier this month, I paid close attention to what they were serving. It was no surprise to see lots of fruits, whole grains, oatmeal, and yogurt. So when I was at y local Walgreens picking up a box of heart healthy Post Cereal, I knew that I wanted to incorporate several of the items from the Go Red breakfast that I attended into a yummy recipe.
I really do like to cook, but with four kids under the age of five my time is limited. I’m a huge proponent of eating healthy and taking any needed shortcuts to make healthy meals quickly! This Five Minute Fruit, Yogurt, & Cereal Parfait is a fast morning starter. Make it in a cute dish for a fancy breakfast feel, or plunk it in a cup for a healthy breakfast at the office. I chose the Post Great Grains Cranberry Almond Crunch because of it’s texture with a yummy fruit . The Post Great Grains Cranberry Almond Crunch variety is the perfect match for the yogurt and fresh fruit in this recipe!
- Vanilla Non-Fat or Low-Fat Yogurt
- 1/4 cup Fresh Diced Strawberries
- 1/4 cup Fresh Blueberries
- 1/4 cup Fresh Raspberries
- Post Great Grains Cranberry Almond Crunch Cereal
Begin by layering approximately 1/4 to 1/2 cup yogurt in the bottom of a dish. The amount will vary according to how large a parfait that you wish to make. Top this with half of the fresh diced strawberries, fresh blueberries, and fresh raspberries. Sprinkle a little less than 1/4 cup cereal on top of the fruit.
Top with 1/4 cup yogurt and then remaining fruit. Add cereal to top as desired.
Seriously- five minutes and done! This fast heart healthy recipe is a great jumpstart to the day.
