{EASY} Summer Fruit Pizza

Who doesn’t love a colorful summer dessert?  For the next cook-out or summer outing, try this {Easy} Summer Fruit Pizza. It’s also a great way to utilize those summer berries.

I found this recipe in my Pillsbury calendar that I receive every year. It’s an awesome calendar filled with a different recipe for each month.

{Easy} Summer Fruit Pizza

Ingredients
1 roll sugar cookie dough
1 8 ounce package of cream cheese
1/3 cup sugar
1/2 tsp. vanilla
3-4 cups assorted summer fruit (strawberries, raspberries, blueberries, kiwi, etc.)
Apple jelly to brush over fruit
Heat oven to 350 degrees. Spray cooking spray onto a 12 inch pizza pan for a round pizza or spray a cookie sheet for a rectangular pizza. Spread cookie dough evenly in pan to form a crust. Bake 16-20 minutes, then cool completely for 30 minutes.
Beat the cream cheese, vanilla, and sugar in a bowl with an electric mixer until it forms fluffy peaks. Spread over the top of the COOLED cookie crust. Arrange fruit over cream cheese. Brush apple jelly over fruit.
Cut into pizza slices or squares. Serve and enjoy! Refrigerate any uneaten portion.

So delicious! I’ve had this made with Crescent Roll Dough, but not sugar cookie. I like the idea of the sugar cookie crust!
