Are you prepping for the Big Game yet? As a youth minister’s wife, my husband and I have planned Big Game Day festivities for students for years now. I’m always looking for easy game day recipes that kids and adults both will enjoy. At the same time, I don’t want to spend hours in the kitchen. Game day is half about socialization, anyway, right? One of the tricks of the trade that I’ve picked up over the years is to combine pre-made foods with fresh ingredients for a homemade spin that doesn’t take all day. Today’s Easy Homemade Marinara and Touchdown Ice Cream Cupcakes will fool your guests into thinking you’ve been cooking for hours. Yet that couldn’t be farther from the truth!

These cupcakes have a few secret ingredients that give them that extra burst of flavor! The new Edy’s Touchdown Sundae Ice Cream and Butterfinger Peanut Butter Cups Minis are perfect additions to these football themed cupcakes.

Ingredients:

  • Prepared white cake mix
  • 1/2 cup Butterfinger Peanut Butter Cups Minis
  • Chocolate Frosting
  • White Candy Melting Discs
  • Limited Edition Edy’s Grand Ice Cream touchdown sundae

Add the Butterfinger Peanut Butter Cups Minis to the prepared cake mix. Bake as directed on cake mix box.

Once the cupcakes have been removed from the oven and cooled, cut the tops off the cupcakes, level with the cupcake wrapper.

Spread chocolate frosting over the cupcake tops.

Melt half a bag of white candy melting discs. Pour the melted candy into a ziploc bag. Snip off a small portion of a corner. Squeeze the melted candy over the chocolate frosting to look like a football.

Return to the cupcakes. Spoon a scoop of Limited Edition Edy’s Grand Ice Cream touchdown sundae on top of the cupcakes.

Top the ice cream with the Football toppers.

If you need something more savory than sweet, this Easy Homemade Marinara pairs wonderfully with a game day pizza. It can even be made with canned tomatoes!

Ingredients:

  • 1 20 ounce can of crushed tomatoes
  • 1 small diced onion
  • 1 tablespoon garlic powder
  • 1 pinch crushed red pepper
  • 1 pinch salt
  • 1 pinch black pepper
  • 1/4 tsp. oregano
  • 1 tsp. dried bay leaf
  • 1 tablespoon olive oil

Begin by heating the olive oil in a medium sized pot. Add the onion, and cook until soft. Add the crushed tomatoes and spices. Stir completely. Simmer for approximately 20 minutes.

    My husband just looked over my shoulder and say these…..now he REALLY thinks I need to make him some, and like he got the short end of the stick because I didn’t make anything fun for the big game today. I guess I’ll have to make it up to him by making some asap. 😉
