I’m not sure who coined the phrase “lazy days of summer,” but I have never found it to be true in our household. True, the specific schedule that school requires us to keep is thrown out the window, but I still feel that we are just as busy. From summer camps to VBS to family outings, downtime during the summer months is scarce. I still find myself scrounging in the kitchen for dinner ideas for the kids, and after a long afternoon of water play, dinner is sometimes a second thought. I rely on quick recipes, like this one for Easy Chicken and Rice Tacos, to save the evening.
My favorite part about recipes such as these it that they are simple to customize for each member of the family and their preferences. The preschooler doesn’t like tomato? Great, leave it out! The eight year old shys away from lettuce? Give him extra protein! In this recipe, the Uncle Ben’s® Flavor Infusion rice has been infused with herbs and spices, so there is plenty of flavor no matter what additions the family decides to drop.
Again, this recipe is very quick and easy!
Ingredients:
- Taco shells (hard or soft) or taco boats
- Cooked chicken
- Lettuce
- Uncle Ben’s® Spanish Style
- Sliced avocado
- Optional toppings: chopped tomatoes, shredded cheese, diced onion
Cook the Uncle Ben’s® Flavor Infusion rice as directed on the package. With increased ease, the Uncle Ben’s® Spanish Style rice has no artificial flavors or preservatives and only takes 10 minutes to cook. It comes in a convenient, resealable pouch with enough servings to feed the entire family.

While the rice is cooking, warm the taco shells according to their package. Add the cooked chicken and lettuce.

Tacos is my favorite hispanic food. I like making my own tacos at home because I like using organic vegetables and less salt for my diet. This recipe of yours makes me starve right now even by just looking at your photos. I heard a lot of good review for Uncle Bens rice next time I would like to add spanish rice on my tacos.
My kids love those little tortilla boats! They are so easy for kids to eat! I actually often make these for my kids…it’s one of our main go-to’s for a quick dinner.

We’re huge taco lovers at our house. I love the chicken and rice combo. Quick, healthy and delicious. Also, I’ve tried a number of Uncle Ben’s rice blends over the years, but not the Spanish style. I’ll have to pick some up the next time I’m at the grocery!
