We are in the full swing of the school year. I’m lucky that my husband picks my daughter up from school on most days, leaving me a chance to make dinner before she gets home. Does anyone else’s kids come home beyond hungry? Often, an after school snack won’t cut it. My daughter comes home ready for dinner! We have forwarded our dinner time up by about thirty minutes, and I make sure that something is ready for her to eat as soon as she gets home. This Dill Chicken and Sweet Potato Fries dinner is quick and easy to prepare for an after school family dinner. It includes protein and vegetables to make a well-rounded meal.
Ingredients:
- 1 lb. chicken tenderloins
- Olive oil
- 1 lemon
- Salt
- Dill spice
- 1 pepper, cut into thin rings
- 1 onion, cut into thin rings
- Alexia Sweet Potato Fries
Place the Alexia Sweet Potato Fries in the oven according to package directions.
While the Alexia Sweet Potato Fries are baking, prepare the Dill Chicken and vegetables.
Pour 3 tablespoons of olive oil in a small bowl. Cut the lemon in the half. Squeeze the juice from both sides of the lemon into the olive oil.
Brush the lemon mixture onto all sides of the chicken tenderloins. Sprinkle the chicken with salt. Sprinkle the chicken will dill spice. Use as much or as little as you need. Dill is tasty, so we are typically pretty free with the dill spice!
Cook the chicken in a large saucepan (with olive oil in the bottom of the pan) over medium heat until the chicken is cooked through.
Remove the chicken. Add the onions and peppers to the oil. Cook until the vegetables are soft.
Plate the Alexia Sweet Potato Fries with the Dill Chicken and vegetables. Enjoy dinner! An appropriate serving size of Alexia Sweet Potato Fries is 84 grams.
