Dessert for Two: Vanilla Cupcake Whipped Cream Cake

I’m still trying to lose those pesky post-baby weight pounds. Yes, they are still hanging around two years later. I’m currently in the process of implementing lifestyle changes that I hope will be permanent. I have my hubby on board this time, so I’m hoping that makes a big difference. My biggest hurdle is my sweet tooth. So I’m trying to find ways to lighten up a few of my favorite desserts so that I don’t have that weight of guilt every time I have something sweet. This Vanilla Cupcake Whipped Cream Cake is made in a smaller portion and is perfect for two people.

Ingredients:

  • (2) Yoplait Greek 100 Whips! in Vanilla Cupcake
  • 1 cup Light Whipped Cream Topping
  • 1/2 cup granola
  • Strawberries
  • (4) Graham crackers

Mix the whipped cream topping with both the Yoplait Greek 100 Whips! in Vanilla Cupcake cups.

Now layer the cake. In a small dish, place two graham crackers. Top with half of the whipped cream mixture. Top with second two graham crackers. Spread the rest of the whipped cream mixture on the graham crackers. Sprinkle granola on top. Place strawberries on top. Refrigerate for at least four hours to set.

Easy, right? Using yogurt is a quick way to add flavor and protein to a dessert, especially when you’re time strapped.
