Coconut Lime Cupcakes

Hold on to your seats, folks, I’ve made cupcakes that were not from a box.ย 

That’s right- for the second time ever…I’ve made cupcakes from scratch, and I may never go back! Okay, that’s a lie, I’m a working mom, so I’ll break out the boxed cake mix in a heartbeat. But I can now say without a doubt, that made-from-scratch cupcakes are the best ever. Especially these Coconut Lime Cupcakes that I discovered over at Bird on a Cake.ย 


Her recipe is yummy and easy to follow. And even if I do break out the box cake mix, her icing recipe is a keeper. It’s less sweet and fluffier than icing from a can.

    Thanks for sharing my recipe, Melanie! I love these cupcakes soo much…I’m glad you do too! Some of my recipes do use a cake mix, but I always add a few ingredients to make them better. :0)
