I’m sharing another recipe today! I am always in need of quick potluck type of recipes for the holidays. Here’s another one to make taking food from place to place a bit easier:
BBQ Chicken Tortillas
Ingredients:
- 1 tub of ready-made chicken BBQ (I used Lloyd’s)
- 10 six ounce tortillas (soft)
- 1/4 of a small onion, chopped
- 2 cups of shredded Mexican style cheese
- Shredded lettuce
- Diced tomato
- Salsa and other sides (beans, rice, etc.)
Lay the 10 tortillas on ungreased cookie sheets. I had to use two cookie sheets. The edges may not fit exactly flat, just make sure that the middle does. Open the tub of chicken BBQ and a few tablespoons of BBQ into the middle of each tortilla until the entire tub has been used. Sprinkle a bit of chopped onion onto each BBQ on each tortilla. Sprinkle the shredded cheese on each tortilla in the same manner.
Bake at 350 degrees for 15 minutes.
Sprinkle each tortilla with shredded lettuce and diced tomato. Serve the tortillas whole with sides for a meal or cut into fourths and serve with salsa as an appetizer.

I have found it in most grocery stores near the refrigerated ready made sides (mashed potatoes, etc)
