Last night, I went shopping for back to school supplies. Whew. If the amount of supplies are any indication of what my daughter will learn this year, she’s going to have an awesome year! We have the backpack, lunch box, and most of the supplies. I’ve worked out her gymnastics schedule for when school starts back. I’m feeling unusually prepared (just don’t ask me if I’m ready for the triplets to head back). I’m also working on my arsenal of after school snacks. No matter how much food that I pack her for lunch or snack at school, she arrives home famished. One of our favorite after school snacks is apple slices. We like to play around with them to see what different variations we can devise. This one is our new favorite, and it’s so tasty that we won’t be waiting until back to school to start munching!
Ingredients:
- Apples, washed
- Almond butter
- Honey Bunches of Oats Honey Roasted
- Honey
- Optional: Lemon juice (use this to brush on the apple slices if you are not serving them right away)
Peel, core, and slice the apples.
You can do this however that you normally would, but we have an apple corer and it is a lifesaver! It is easy to clean and will slice and prep apples in no time.
If you’re not serving the apple slices right away, brush a light coat of lemon juice on them.
Spread a layer of almond butter on the apple slices. This can be as thin or thick as you choose.
Sprinkle a layer of Honey Bunches of Oats Honey Roasted on top of the apple butter. The thicker the apple butter layer, the more Honey Bunches of Oats Honey Roasted that you can have on top!
Drizzle honey on top of the slices.
Yes, this is messy, but oh, so yummy!
