I very rarely post about kitchen tools that are a “must-have” for the house. In reality, the little gadget that I’m talking about today is not necessarily something that I can’t live without, but it sure is awesome! I found one of these in the clearance section of AC Moore a few weeks ago. I brought it home, and my daughter thought it was simply fabulous. After all, it creates fast and easy little treats such as these below!
The special gadget for creating these little ice cream sandwiches is this Cuisipro Ice Cream Sandwich Maker. It comes with three plastic shapes- a heart, star, and circle. As I stated above, I found mine in a clearance bin at AC Moore, but Amazon also sells the (affiliate link) Cuisipro Ice Cream Sandwich Maker on their website.
The instructions for using the sandwicher maker are as straightforward as it gets. Use the edge of the sandwich maker to cut the cookie, then fill with ice cream, and then use the edge to cut the other part of the cookie.
The hardest part may be deciding what cookie recipe to make! I went with a ready-t0-bake cookie dough, but you can also use your favorite cookie recipe paired with any ice cream flavor that you chose. Cookie the dough in a large piece on a cookie sheet.
I have made a few batches of these mini ice cream sandwiches so far. I made them once to take to a party, but all of the kids ate them before I could get them out of the door.
One word of caution- when baking the cookie, let the cookie cool absolutely, 100% completely before making the mini ice cream sandwiches. If there is any warmth at all on the cookie, the ice cream will melt almost before you can get it back into the freezer.
I am sure that these would be a hit at a potluck or cookout! If I can ever get a batch out of the house, I’ll let you know!
