If you have kids, there’s one thing for certain. They are going to want dinner every night. Shocker, right? The second certainty is that I am not in the mood to cook a gourmet dinner every night. I’m sure you feel the same way! Some nights are meant for effortless meals. This Southwest Chicken Bake is tasty, full of flavor, and enormously easy to make. And guess what? My kids- all four of them- love this meal. It has enough flavor to tingle their taste buds without being too spicy. If you don’t have a large family, this recipe is still a great one to keep on hand for potlucks.

Ingredients:

  • 1-2 bags of Tyson Grilled & Ready Chicken Breast Fillets
  • 2 bags of Birds Eye Protein Blends Southwest Style Blend
  • 1/2 cup flour
  • 1 small red pepper, sliced
  • 1 small yellow pepper, sliced
  • 1 small onion, chopped
  • 1 cup fresh baby spinach
  • 1/4 cup Mexican blend cheese
  • Olive oil
  • Pinch of salt
  • Pinch of pepper
  • 1 clove garlic, minced
  • 3 cups milk
  • Cooking spray

Preheat oven to 350 degrees.

Heat a few tablespoons of olive oil in a large pan on the stovetop over medium heat. Throw in the peppers, onion, garlic, and spinach. Cook until the vegetables are tender. Add the flour, salt, pepper, and milk. Once the mixtures begins to bubble, add the two bags of Birds Eye Protein Blends Southwest Style Blend and the cheese. Cook for five minutes.

While for the mixture is cooking on the stovetop, place 1-2 bags of Tyson Grilled & Ready Chicken Breast Fillets in the bottom of a 9×13 baking pan covered in cooking spray. Place chicken in the bottom of the pan until the pan is covered, being sure to not place the chicken on top of one another but rather side by side. You will not need the entire second bag unless you decide to use a larger pan.

Pour the mixture from the stovetop over the chicken. The mixture will look thin before placing it in the oven.

Bake for 20-30 minutes, until the dish is bubbly around the edges and heated through.

I enjoy using a few fresh vegetables, but I also like the ease of using frozen ingredients to save time. Tyson Grilled and Ready Chicken Breast Fillets are fully cooked without any preservatives. The combination of the Tyson Grilled and Ready Chicken Breast Fillets and the Birds Eye Blends provides a protein packed dish. The chicken and veggies are also handy to have in the freezer for quick meals in the microwave, too. Be on the lookout for them both in the freezer section of your local Walmart.
