I can’t tell you how many times over the past fifteen months that I’ve skipped breakfast. It’s been unintentional every time- I’m not one of those people who doesn’t eat breakfast. I have so many things to do for the kids in the morning that by the time I get a chance to eat it’s almost lunch. So I just skip breakfast, which is not a smart move, I know. I’ve discovered that if I’m actually going to get to eat breakfast then I need something fast and preferably microwaveable. And since it’s berry season here in the south, I’ve been whipping up a Blueberry Banana Smoothie with fresh blueberries straight from the orchard.

Ingredients:

  • 1 Banana
  • 1/2 Cup Unsweetened Almond Coconut Milk
  • 1 cup Blueberries
  • Half a Lemon
  • 3/4 Cup Ice

Ready for this ultra complicated recipe? Dump the blueberries, peeled banana, ice, and milk in a blender. Squeeze the juice from the lemon into the blender. Blend until smooth. And that’s it!

Blueberry Banana Smoothie
Serves: 1
 
Ingredients
  • 1 Banana

I am glad that I not only get to have breakfast regularly now, but also that it’s a protein packed, easy breakfast! Day Starts have 24% or more of my daily protein intake.     This looks like a great breakfast idea! I’m certainly going to be making more smoothies for my kid’s during the summer. I’ve pinned this one so I can easily find the recipe again! Sounds delicious!
