Steamed Honey Glazed Carrot Medallions

Unless you’ve been living under a rock, you’ve heard of Pinterest. Even my husband has heard of Pinterest. He found a children’s church craft on there one day and thought that it was just the best thing ever. I use Pinterest mainly for crafts and recipes. If you’re not following me over there, check out my boards. I’d love to have you pinning along with me. And it might just come in handy later on in the post, hint, hint. Some time back, I found this recipe for Honey Glazed Carrots from Happy Hour Projects on Pinterest. However, after asking her on her blog I realized that the carrots would not be soft enough for the boys to eat. So I decided to twist it up a bit!

Steamed Honey Glazed Carrot Medallions  |


  •  1 pound raw carrots
  • 1/3 cup butter
  • 1/3 cup honey
  • 2 tsp. majoram

Begin by washing and peeling the carrots. Cut the top off, then continue to cut the carrot into medallions that are about 1/4 inch in thickness. Steam the carrots until they are totally soft and tender. A spoon should be able to cut through them.

Transfer the carrots to a large bowl. Add butter, honey, and marjoram. Stir until carrots are coated. Serve.
